Talented Lisbon-based José Avillez has emerged as the most influential chef in Portugal. He won a second Michelin star this year at his restaurant Belcanto (making reservations here essential). His menu evolves constantly, but runs to dishes such as grilled red shrimp with chestnut, fennel and cardamom purée; and roasted suckling pig with fried potato and orange.
