Where: Santa Fe, New Mexico

What: High-desert retreat with 10 rooms in an atmospheric hacienda on a low hill and surrounded by 336 private acres dotted with juniper and piñon, 20 minutes from Santa Fe. Exquisite scenery, with uninterrupted views extending to Los Alamos in the west and to the Sangre de Cristo Mountains in the east.

Why Go: The gloriously remote setting; the sophisticated cuisine; the house-party atmosphere.

Good to Know: There is a two-night minimum stay; guests who stay three nights or longer can take a cooking class with the chef.
